  • 50g almonds
  • 50g pistachio
  • 60g eschalots
  • 300g mushrooms mixed, field/button/portabello
  • 50g Butter
  • 1 small bunch parsley
  • 2 sprigs thyme
  • 1 Salt and Pepper to tasts
  • 2 cloves garlic, peeled
  • 20g olive oil

Recipe's preparation

    pate
  1. dry roast or grill nuts till golden brown 

    chop eschalot and garlic scrape down add butter and oil and cook 5mins/100/speed 2

    add roughly chopped mushrooms/thyme/parsley and cook 10min/100/speed 1.5/with basket in place of mc,allow to cool slightly

    add nuts and process on speed 10 for 30secs put into 2 greased ramekins.

    serve with crackers or bread

    Made this for vegetarian friend. Lovely. Also added extra thyme and sage. Added a teaspoon of cognac and cream before blending. Also used walnuts. Melted some butter to pour on top as I froze them. Yum, and I don't even like mushrooms.

    Thank you, wonderful flavour and texture, easy and quick recipie.

    I also substituted the pistachios for walnuts to use what I had.

    This is a keeper!
