Recipe's preparation

  1. prepare quince wash and remove fuzz ascrubby cloth you can peel if bruised mine were ok,1/4 and remove cores put cores and pips in jug put fruit in varoma (i had 2kg fruit so prepared all but cooked in two batches YOU CANNOT DOUBLE THIS RECIPE)
    chop cores 3secs/speed 7-8 scrape down add 700g water put varoma in position and cook for25min?varoma/speed 1,strain liquid through a seive reserving the liquid discard the pulp.
    now weigh in half the liquid aprox (100g) add fruit till you have 1.1kg add 750 gram sugar the recommended sugar is 75% of fruit weight
    now chop 10secs /speed7 scrape down and set cooking time
    USE steaming basket in place of mc during cooking times
    20min/varoma/speed 1 (scrape down and reset again)
    20min/varoma/speed 1.5 (scrape down and reset again)
    20mins/varoma/speed 2 at the end of cooking it should be thick and red PROCEED WITH CAUTION THE MIXTURE IS VERY HOT
    pour into silicone muffin pan or into one tray lined with baking paper you can cut into portions i found popped out easy there was enough to fill a 12 size one i got from kmart plus a small container to slice up
    wrap in greaseproof paper to store in fridge keeps for a long time

Tip

i combined a few recipes ginnys kitchen and tmix (never cover the tmx with cloth to reduce splashing you just need to reduce speed once its been cooking say 1/2 way you can increse speed slightly)but by checking during the hour cooking time you can see if sticking or ready
