Bacon, Broccoli Cheesy Corn Fritters
- 200 grams bacon
- 150 grams cheese, chopped into cubes
- 150 grams broccoli, florets
- 2 tablespoons fresh chives
- 150 grams plain flour
- 80 grams self-raising flour
- 250 grams Milk
- 2 eggs
- 420 grams Corn, canned or fresh
- olive oil, for frying

- Add broccoli florets, chives, cheese and bacon to mixing bowl and chop speed 5, 3 - 5 seconds until desired consistency is achieved. Empty contents into a separate bowl to the side.
- Add flours to mixing bowl and insert measuring cup to lid. Select Turbo function and turn selector 3-5 times to sift flour.
- Add milk, eggs and corn along with the chopped bacon, broccoli, cheese and chives. mix for 10 seconds, speed 4 "Counter-clockwise operation"
- Once combined (use spatula to scrape any excess flour from the sides of the bowl if needed), spoon heaped tablespoons of mixture into a greased, medium heat frying pan to cook. Once bubbles begin to appear, flip fritters over being careful not to burn. Repeat until all batter is gone.
Tip
Serve warm with salad, cold in lunchboxes or freeze them for school/work lunches as a quick grab and go option.
