- 2 1/2 teaspoons dried crushed garlic
- 1/2 teaspoon dried rosemary leaves
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon rock salt
- 4 Medium potatoes, cleaned
- 3 tablespoons olive oil

Combine all into mixing bowel Varoma / 2 min / speed 1.
Let cool then mill 10-20 sec / speed 9 or until desired texture achieved.
scrape down and set a side.
Pre heat oven 220ºC
Cut each potato in half lengthwise, then cut each half, lengthwise, into 4 equally sized wedges. Add the potato wedges to a large mixing bowl with the rest of the ingredients. Toss with hands to coat the potatoes evenly.
Line a thin sided pan with foil. Place the potato wedges, skin side down, on the foil. Space evenly, so they cook evenly. Bake for 30-35 minutes, or until well browned, crusty edged, and tender. Serve immediately.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.
We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.
All herbs are fresh (unless specified) and cups are lightly packed.
All vegetables are medium size and peeled, unless specified.
All eggs are 55-60 g, unless specified.
