Ingredients
Simple Cauliflower Cous Cous Salad
- 500 g cauliflower, cut into florets
- 40 g sultanas
- 200 g pumpkin, cut into cubes and roasted
- 100 g sweet potato, cut into cubes and roasted
- 1/2 red onion, finely diced
- 8 sprigs parsley, Flat Leaf, leaves only
- 8 sprigs fresh mint, leaves only
- 15 g Pepita Seeds
- 500 g water, for steaming

Roasting - Place pumpkin and sweet potato into oven to roast until browned.
Cous Cous -
Step 1. Add cauliflower into bowl with MC inserted and chop for 5 seconds / speed 5. Transfer to varoma. Rinse your bowl.
Step 2. Add water to the bowl and place varoma into place. Steam cauliflower for 12 minutes / varoma temperature / speed 2.
Step 3. As soon as cauliflower is cooked, remove the lid and add sultanas and mix through. Allow to cool (maybe 20 minutes).
Step 4. Once roast veg is cooled enough, start to assemble salad. Toss onion, torn up mint and parsley, roast pumpkin and sweet potato into varoma and stir with spatula.
Step 5. Transfer cous cous into a serving bowl and sprinkle with pepita seeds.
This cous cous salad could be served warm or cold.
Tip
Salad is a great side dish or could be enjoyed as is. A mustard balsamic vinegar dressing could also be added to salad

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
