Ingredients

Soup

  • 1 whole head broccoli
  • 1/2 peeled brown onion
  • 2 medium peeled potatoes
  • Rind of 1 lemon
  • 250g water
  • 1 tablespoon chicken or vegetable stock

Optional Toppings

  • 40g Goats feta
  • 20g olive oil
  • 40g Mixed seeds or quinoa
  • Salt and pepper

Recipe's preparation

  1. 1. Roughly chop all ingredients
    2. Add all soup ingredients EXCEPT LEMON RIND into bowl and cook 20mins/varoma/s1
    3. Once cooked, add lemon rind and gradually increase from sp1 to sp10 for 1 minute.
    4. Serve into bowls and top with optional toppings

Tip

Tastes fab on its own but packs a great punch with toppings. You can add lemon rind at the start but I found it more overpowering this way.
