chop half an onion speed 7, 3 secs
add 2 tbsp olive oil and one clove garlic
saute 70 deg speed 3 for 1 min
add 1tbsp vegetable or chicken stock
add 400ml water
Add 500g butternut pumpkin cubed, 1 potato cubed.
cook 120 degrees for 25 mins speed 3 reverse
process @ spded 6 for 3 minutes, (if still lumps, go another minute or two)Pour in to thermoserver, add half a cup of cream, mix through using spatula, garnish with fresh parsley sprigs and fresh finely chopped chives.
Tip
Can substitute onion for leek Add any other vegetables at same time as pumpkin
serve with warm bread or rolls.
