Califlower soup with parmesen and bacon dust
- 150 g bacon
- 60 g Parmesan cheese, grated
- 950 g cauliflower, cut into pieces
- 3 tablespoons Vegetable stock paste
- 900 g water
- 25 g Butter

- Preheat oven at 200c, Line a baking tray with baking paper, lay out rindless bacon (no fat) bake for 20-25 mins or until crispy.
Lay bacon on paper towel to absorb liquid.
Once cooled add to mixing bowl and mill 10 sec speed 9
Set aside. - Add to bowl, mill 10 sec speed 9 set aside
- half onion, chop 5 sec sp 7 scrape down bowl, add 10 g butter,cook 5 mins 75c sp 3
Add Califlower, water, stock cook 20 mins/100c/sp1
add remaining butter cook 5 mins/100c/sp1
blend 1 min speed 5-9
sever soup hot topped with parmesan cheese and bacon dust.
