Carrot, ginger and beetroot soup

  • 2 centimetres ginger fresh
  • 3 Garlic cloves peeled
  • 2 tablespoons Oil for frying
  • 3 Carrots, chunks
  • 2 Small beetroots peeled and chopped
  • 2 tablespoons TM vege stock
  • water

Recipe's preparation

    Carrot, ginger and beetroot soup
  1. Put ginger and garlic in TM bowl Sp9 2-3 sec



  2. Add oil and cook 100C, 2 mins, Sp2

  3. Add all other ingredients and add water until 1-2 inches higher than the blades. Cook for 25 mins, Sp3, 100C.

  4. In the last minute blitz on Sp 7 for 30 secs.

Tip

Add sour cream for a dairy option

    This smelt really nice when it was cooking but we found the flavours weren't to our tastes.

    Really nice.  I just used water to saute to keep the calories down, and next time might add a bit of chilli.  Thanks!
