Ingredients
1 brown union
- 1 brown onion
- 1 piece celery root
- 1 carrot
- 1 Glove garlic
- 60 mls Olive Oil
- 1 bay leaf, Small
- 400-450 g chestnuts, 1 can
- 50 g cream
- 1 pinch safron
- salt, To taste
- pepper, To taste
800 mls
- 800 Mls chicken broth or water and 1 tsp chicken paste

Chop the chestnuts 3-5 seconds, speed 5. Set aside.
Chop the celery, carrot garlic and union 7sec, speed 5.
Add the olive oil and sauté 5 minutes, 100 degrees, speed 2.
Add the chestnuts, chicken broth and the bay leaf. Boil 15 min, speed 2, "Counter-clockwise operation"
Add cream and mix "No counter-clockwise operation" starting from speed 2 and gradually increasing to speed 7-8, 10 sec. If not smooth enough mix 5 sec more. Before starting to mix add the saffron if using.
Add salt and peppertoo taste.
Garnish with fresh parsley and add croutons upon desire.
