Ingredients
Chunky Pea and Ham Soup
- 3 cloves garlic peeled
- 2 onions (medium), Halved
- 1 leek washed (large not leaves), Roughly chopped
- 2 Washed carrots (large), Roughly chopped
- 1 tablespoon olive oil
- 1 whole large sweet potatoe peeled, Roughly chopped
- 2 celery sticks, Roughly chopped
- 560 gram water, check part way through to top up if required
- 1 tablespoon veggie stock concentrate, home made from basic cookbook
- 150 grams split peas
- 750 grams ham hock
- 6 slices short cut bacon, Cubed
- pinch pepper
- 1.5 level tablespoon winter soup spice from gewurzhaus, can buy online if outside of Melbourne or Sydney

1.) Blitz split peas speed 7 until fine (60 seconds)
2.) Place garlic, onion and leak in bowl chop 3 secs/speed 7. Scrape down the sides.
3.) Saute 5mins/120 degrees/speed 1
4.) Add all remaining ingredients, leaving bacon aside. Place ham hock in varoma and put in place. Cook 60 mins/varoma temp/speed 1. Check part way through to see if more water is required, make sure its under the max line though.
5.) Remove varoma, remove meat from bone and dice and place in bowl with the bacon that you set aside and cook 15mins/100 degrees/speed 1
Serve with fresh bread and butter

Tip
I found that you didnt need more than the 560grm water as the orignal recipe called fro 1000grms. This was due to it coming just below the max line, do not take over this line or you will end up risking your machine. I did check part way through to see if it needed topping up with water and found it didnt.
Be aware that the bottom of my bowl inside was slightly burnt, I cleaned by milling rock salt and then scrubbed with bi carb soda and water mixture with the cleaning brush before placing in dishwasher for final clean and all good.
Please NOTE this recipe is NOT for the TM31. Only the TM5

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
