Ingredients
- 1 leek, White section only, roughly chopped
- 1 tablespoon oil/butter for greasing
- 400 grams cauliflower, roughly chopped
- 2 tablespoons TM vegetable stock concentrate
- 500 grams water
- dash paprika, optional
- Salt & Pepper optional, to taste
- 2 Rashers of Bacon, roughly chopped
- 80 grams sour cream

Place rashers of bacon in TM, and shop for 5 seconds on Speed 5. Add Leek and chop for 4 seconds on speed 5, scrape down sides.
Add oil/butter and cook for 2 minutes, 100 C on Speed 1. While that's cooking, prepare the cauliflower.
Weigh in the cauliflower. Measurements can be approximate. Chop for 5 seconds on Speed 5-6. It will all be quite fine now!
Add stock and water, cook 20 minutes, 100 C, speed 1.
Add paprika and turn the dial slowly up to blend for 1 minute on speed 10. Taste for any desired salt and peper, but not really needed because of the bacon!
Add sour cream and blend again for 20 seconds on Speed 3
Note: This is also nice served with a bit of parmesan cheese or TM Bacon dust

Thank you for the recipe. I follow low carb for the most part and was looking for a yummy cauliflower and leek soup, when I found yours. Only had speck on hand so added about 100gms or so in place of the bacon. And used prepared organic chicken stock in place of stock paste and water; it has far less salt. Absolutely delicious and have added it to my collection for future use.
after making this a few times, the type of bacon does make a huge difference. packaged bacon that has been preserved for a while is very salty, where as a fresher smoked bacon is not as salty. This requires no added salt whatsoever because of the bacon, and adjusting the amount of bacon to taste is advisable. After my first veriosn of this i did reduce the bacon but i have certainly found unpackaged smoked organic bacon to be the best.... for those that do not like a salted taste- this is not for you
