Ingredients
Creamy Bacon, Potato & Thyme Soup
- 600 grams potatoes, peeled and cubed
- 100 grams celery, chopped
- 70 grams leeks, chopped, cut in 2cm lenghts
- 50 grams onion, peeled & halved
- 50 grams Butter, cubed
- 80 grams bacon, lardons/ diced
- 200 grams cream
- 3 sprigs Thyme
- 2 cloves garlic
- 1 heaped tsp Sea Salt & Black Pepper
- 2/3 level tablespoons TM stock concentrate
- 1 litre water

Add Potatoes, Bacon, Leek, Celery, Onion, Garlic, Thyme and Butter to the TM Bowl and chop at Sp 7 for 10 seconds.
Add Salt, Pepper and Cream and Cook 4min / 70 degrees / Sp 1.
Add 1 tsp Stock and 500g of water and cook 20 min / 90 Degrees / Sp 2.
Soup best served with traditional Irish Brown Soda Bread (recipe to come)
Blend 2mins/ 90 Degrees / Sp 8 until smooth. Then taste test - adjust seasoning as required.
Add remaining stock and 500ml of water and cook 4 min / 90 Degrees / Sp 3.
Serve and Enjoy.

Tip
This Soup is Gluten Free.
Substitute olive oil for Butter and extra stock and nut milk for cream to make it dairy free.
Omit the bacon if serving to Vegetairians.
This soup is best served with traditional Brown Irish Soda Bread - recipe to follow.

As I had heaps of leeks in the fridge that needed to be used I omitted the onion & substituted the leek instead. I found that I couldn't fit all of the litre of water in so I used about 750ml, whichever worked fine. Also, I used only about ½ tablespoon of stock and didn't add salt when seasoning as the stock is so salty. Overall, a very yummy soup!
I agree with Pontifek with sautéing the leeks and onions (on Varoma temp) at the start, and also with not adding the extra stock. Exactly what I would do next time too. I might also try sautéing the bacon with the leeks and onions at the start too to slightly caramelise it.

Lovely, didn't have any leeks but could taste the raw onion flavour. I would blitz the onion and sauté in the butter first and then start at step one next time. Also didn't need the extra 500gms of water or stock. Just add salt and pepper at step five.
This is a really lovely soup and very easy to make. I had the same problem with the amont of water too - I could only add 400 g. This didn't affect the soup though - I think that if I had added the whole litre it would've been too thin.
Really tasty, nice texture, creamy yummy soup. Kids and adults all loved it. Only difference I did was only added 300ml water at step 5 as this took my soup to the 2L limit mark - not sure why I had so much more soup at this point than you must have!
I did a slight variation on this one, as I didn't add the celery (my husband hates it!). I thought it was quite good, but I over-seasoned it with salt before adding the second lot of stock. It ended up just a smidge too salty. Otherwise, it was lovely! The texture was really good...even my super-fussy, veggie-hating, almost-3-year-old liked it. She ate the rest of mine, and then her bowl, and still asked for more! Will make it again (without adding extra salt!). Thanks for the recipe!
