Ingredients

  • 40 grams Butter
  • 250 grams bacon, fat removed, diced
  • 3 cloves garlic
  • 1 brown onion, cut in rough chunks
  • 800 grams cauliflower, cut into small florets
  • 2 teaspoons Vegetable Stock - EDC
  • water, (enough to cover bowl contents)
  • 100 grams Pouring Cream

Recipe's preparation

  1. *  Add garlic and onion to the TM bowl and chop 6 seconds speed 7, scrape down sides of the bowl.

    *  Add diced bacon to the TM bowl with 40 grams butter and cook for 5 minutes on Varoma speed 1.  Scrape down sides of the bowl.

    *  Add cauliflower and blitz for 10 seconds on speed 7

    *  Add stock  and enough hot water to just cover the bowl contents and cook for 20 minutes on Varoma speed 1.

    *  Blend for 1 minute gradually increasing the speed from 1 to 9.  Repeat if you prefer a completely smooth consistency.

    *  Add cream and mix for 10 seconds on speed 6.

Tip

Serve sprinkled with your choice of grated cheese (tasty cheddar or parmesan) and a slice of crusty bread or sourdough on the side.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
