Ingredients

  • 800 grams Pumpkin flesh cubed
  • 1 onion
  • 20 grams olive oil
  • 3 tablespoons Red Thai curry paste
  • 1 can Can Coconut Cream (400mls)
  • 1 bunch fresh coriander
  • 2 teaspoons Palm sugar or brown sugar
  • 1 heaped teaspoon TM vegie stock paste
  • 250 grams water

Recipe's preparation

  1. Chop coriander by dropping through the lid onto running blades at speed 8.  Scrape out bowl and set aside.  No need to wash out bowl, continue with next step.

  2. Chop onion 3 seconds, speed 5.  Scrape down bowl

  3. Add oil and cook Varoma temp 5 mins speed 2

  4. Add curry paste and cook Varoma temp 1 min speed 2

  5. Add coconut cream, water, vegie stock paste and pumpkin.  Cook 100 degrees 30 mins speed 1

  6. Add palm sugar insert MC and blend for 2 mins gradually increasing to speed 10 .

  7. Stir in chopped coriander 

Tip

I love fresh coriander, if you are not a fan you may wish to reduce the amount or just use a few leaves as a garnish instead.

The recipe works well with either red or green curry paste.  I have even used both together to use up leftover paste from the fridge.

    Threw this one on just before cooking up veges for the kids.  I left out the coriander (didn't have any), used rapadura as well as our tmx made red thai curry paste and a leek as I didn't have an onion.  Yum!  Our 5 year old had a few spoonfuls and has requested it for breakfast tomorrow lol

    I only used 100g,s of water and 1 tablespoon of curry paste and it turned out lovely and suitable for my children

    Thai pumpkin soup ....So yummy!  Didn't have any coriander and I used a tin of light evaporated coconut milk, was great!

    your mention of water got me thinking I should have said 250g of water as I usually use a cup not 1/2 cup as I wrote above.  In the end it all comes down to how thick you like it.  I guess it's easier to add more liquid if you like since you can't do the opposite and take it away  tmrc_emoticons.)

    I made this tonight and it is delicious!!  I made a few changes, no onion, I misread 1 tsp stock and used 1 tbs, and forgot to add the 125ml water but it turned out beautiful anyway.  Thanks for a great, no fuss, tasty recipe! Big Smile
