Ingredients

Get together:

  • 500 grams Mince Meat, Beef, pork, turkey - whatever
  • 100 grams Parmesan cheese, Chopped into 1cm squares
  • 1 Handful fresh parsley, or 1 inch squeeze of tubed.
  • 1 teaspoon dry oregano
  • 1 egg
  • 50 grams olive oil
  • 1 brown onion, Quartered
  • 2 zucchini, Roughly chopped
  • 1 celery stick, Roughly chopped
  • 2 garlic cloves, Or 1 inch squeeze from tube/1 tsp from jar
  • 2 400g cans diced tomato
  • 1 litre chicken stock, Or 1tbsp chicken stock powder + 1 litre water / Or 2 chicken stock cubes + 1 litre water
  • 80 grams cous cous

Recipe's preparation

  2. Shred parmesan - 10 seconds - speed 9 - leave in bowl.


    Add mince, parsley, oregano and egg - 40 seconds - speed 3


    *** Remove and set aside - roughly rinse TM bowl ***


    Add onion, zucchini, celery & garlic to bowl - 20 seconds - speed 4.


    Add oil. Cook 3 minutes - 100º - speed 3


    *** During this time, roll mince into bite sized meatballs and put on Varoma trays - which ever trays they fit on. Wet your hands to make the rolling a bit easier. ***


    Add tinned tomato and stock to bowl. Put Varoma with meatballs on top of Thermi. Cook - 20 minutes - Varoma temp - reverse - speed 3


    Remove Varoma, pour soup into Thermoserver or large bowl that you can cover. Add Cous Cous - let sit for 5-10 minutes.


    Stir it all together and serve with crusty bread.

Tip

This recipe freezes incredibly. It's a staple in our freezer for lunches.
It is a thick soup, so you could get away with calling it a stew.

    I've tweaked this recipe a little bit - amended cooking times and reduced cous cous quantity. I made this with turkey mince the other night and it was beautiful.

    So good! My husband isn't a soup fan but loved this. I also left the parmesan out of the meatballs as my daughter is allergic to dairy, I did add a heap of veges to the meatballs as well, then I added parmasan to mine and my husband s at the end , just sprinkled on top . Will be making this as a regular dinner in our house .

    Great recipe and really tasty. I made this for work lunches and froze it.  It freezes really well. I used pork mince for the meatballs...delicious

    What can I say but bloody amaaazing.  First yime I've had Cous cous and so glad I had it with this recipe.  Master 6 devoured 6 helpings.  Hubby who hates soup wants it as a regular meal.  Thank you so much for sharing

    The parmesan stays in the bowl after the first step and gets mixed into the meatballs for a bit of extra flavour.  tmrc_emoticons.)

    This recipe  will be one of our family favourites it was delicious.  But can you tell me when was the grated cheese to be added.  I mixed it in at the end when I added the meat balls to the soup. tmrc_emoticons.)

    DELICIOUS! The only thing I would change is the amount of cous cous for us, so it becomes more soupy. Made it with pork, it was beautiful, thick and delicious! Will definately make this again

    This recipe is amazing!!! So easy to make, easy to hide additional veggies too! I've made this twice. First time following the recipe exact, second time I pan fried the meatballs instead.
