Ingredients
Mushroom Soup with Soba
- 600 grams beef stock, (bone broth is also good)
- 2 teaspoons Mushroom Soy, or to taste
- 1 level tablespoon fish sauce, i use 2
- 1 tablespoon lemon juice
- 300 grams Mixed mushrooms, large slices
- 100 grams soba noodles
- 1 level teaspoon Black Sesame Seeds, for garnish
- 2 sprigs corriander, for garnish

- Prepare your Stock by ensuring it is clear with no meat or fat floaties left from the cooking process.
Add 600mls of your stock and the Fish Sauce to the "Closed lid" warm to 100oC "Gentle stir setting" MC on 3 minutes.
It is important the stock reaches 100oC. - Place your pre-sliced Mushrooms (fresh or foraged) and your Mushroom Soy Sauce into the "Closed lid" . MC on "Counter-clockwise operation" 100oC 8 minutes.
You want steam to be drifting out gently for about 3 minutes of that 8 minute cook. - Leave the lid on and place the Soba through the hole in your lid set time for 3 minutes "Counter-clockwise operation" "Gentle stir setting" 100oC.
Let sit for 1 to 2 minutes.
Gather your Garnishes. - Gently portion out the Soup Stock into your bowls and using tongs serve the noodle into each bowl and repeat with the mushrooms.
Squeeze the lemon juice into each bowl, place your Corriander in the middle and sprinkle on your Sesame Seeds.
We love Sesame so at this point i also drip 2 drops of Sesame Oil into the middle, however this is not necessary.
I love to use the Corriander flower and sometimes there are immature seeds which adds a crunch.

I use Mushroom Soy Sauce you can use any
Three Crabs Brand fish sauce gives your soup the next level in flavour. I feel it is important to use a quality brand for the flavour. I am sure you can use any brand you have on hand.
Oyster mushrooms tend to break up so my choice are Slippery Jacks and Champignon.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

My Sesame seeds can't be seen because i had taken the picture eaten my soup before i noticed i hadn't included a picture with it.
