Ingredients

Soup ingredients

  • 1 onion peeled and halved
  • 2 garlic cloves, peeled
  • 20 g olive oil
  • 1 potato roughly chopped
  • 8-10 oak lettuce leaves
  • 250 g frozen peas
  • 2 tablespoon Vegetable stock paste
  • 500 g water
  • 1 lemon
  • 2 tablespoon natural Yoghurt or Sour Cream
  • 2 sprigs fresh parsley or corriander
  • 1 --- handful fresh chives

Recipe's preparation

  1. Place onion and garlic into bowl and chop for 5 seconds, speed 5.

  2. Add oil to bowl and saute for 3 min, 100 degrees, speed 1.

  3. Add potato, lettuce, peas, vegetable stock paste and water to the bowl. Cook for 20 min, 100 degrees, speed 1.

  4. Once cooked, blend slowly to speed 8 for 40 seconds.

  5. Add yoghurt or sour cream, then squeeze lemon juice into the bowl. Mix slowly using speed 2 for 15 seconds.

  6. Season to taste, garnish with chives and parsley.

Tip

Substitute oak lettuce for Butter lettuce when in season.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
