Soup

  • 750 g butternut pumpkin, Peeled, cubed
  • 1 tablespoon vegetable oil
  • 2-3 tablespoons Thermomix Red Thai Curry Paste
  • 1 brown onion, large, halved
  • 1 can coconut cream
  • 1 tablespoon Thermomix Vegetable Stock Paste
  • 1/2 litre water
  • salt
  • pepper

Recipe's preparation

  1. 1. Place onion in mixing bowl and chop 3 seconds speed 5.

  2. 2. Add 2-3 tablespoons of Thermomix Red Thai Curry Paste and 1 tablespoon Vegetable Oil and Saute for 3 minutes, 120 degrees, speed 1

  3. 3. Add in pumpkin and chop for 15secs/speed 7.  Scrape down sides of mixing bowl with spatula.

  4. 4. Add coconut cream, stock paste and water.  Cook for 20mins/100degrees/speed 1

  5. 5. Blend 1 min/Speed 5-9 gradually increasing speed.  

  6. 6. Garnish with Thai Basil leaves and serve.

Tip

For a chunkier soup, omit Step 3, and in Step 5 blend at Speed 5/10 secs.  Repeat til the required consistency is achieved.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I loved this recipe!!!

    Although as I'm on a diet I swapped the coconut cream to half a tin of light and 2 cups of water.
