Ingredients

Spicy sweet potato soup

  • 1 onion, roughly chopped
  • 20 g oil
  • 750 g sweet potato, roughly chopped
  • 1 carrot, roughly chopped
  • 1 heaped tablespoon Chicken stock concentrate
  • 500 gram water
  • 270 can Coconut Milk or Cream
  • 1 level teaspoon Chilli Paste
  • coriander, for garnish if desired

Recipe's preparation

    Spicy Sweet Potato Soup
  1. Place onion into mixing bowl and chop 3sec/speed 7. Scrape down sides of bowl.

    Add oil and saute 2 mins/Varoma/speed1

    Add sweet potato and carrot and chop 10 sec/speed 7. Scrape down sides of bowl. Saute 5 mins/Varoma/sp1

    Add chicken stock concentrate and water and chilli paste, cook 20 mins/100deg/sp 1

    Add coconut milk/cream and blend 1 min/speed 9, gradually increasing speed from 1 to 9. Garnish with coriander and serve.

Tip

Serve hot, garnished with coriander, and with crusty bread on the side.

If you like it spicier add more chilli paste, if you would like it more kid friendly, use sweet chilli sauce instead of the chilli paste

    Made this last night and very much enjoyed it. I halved the recipe as didnt have enough sweet potato, it turned out fine.

    Beautiful. I added a couple of potatoes because I ran out of sweet potatoes. Not a chili person so left that out, soup was delicious. Thank you!

    One of the best soups I’ve ever made (and I’ve made a lot)! As we’re on the LCHF diet this worked well with our meal plan. Used the variation of sweet chilli sauce instead of paste and it turned out great. Delicious soup!

    This soup got the seal of approval by the man he said it was delicious and I agree. Didn't have enough chili paste but still yummy. Love trying new soup recipes this one yet the tick

    One of my new favourite soups! I love it. I use a fresh, long red chilli during the onion stage instead of the chilli paste. I've also shared this on my Thermie FB page, here's the link:

    Made this twice now - and have had people ask for the recipe!I add a de-seeded chilli (instead of the chilli paste) and a good chunk of peeled, chopped ginger at the onion stage. Delicious!
