Ingredients
Bisque Paste
- 2 Red Chillies
- 20 g garlic cloves
- 50 g ginger, sliced
- 250 g Prawns, peeled (reserve heads and shells)
- 20 g peanut oil
- 10 g each of light soy, sesame oil and brown sugar
- 100 g spring onions, sliced
- 50 g carrots, sliced thinly
- 50 g celery, sliced thinly
- 2 stalks lemon grass, sliced
Bisque
- 1 heaped tsp tomato paste
- 1 1/2 tsp Tuckeroo Lemon Myrtle
- 2 Kaffir lime leaves
- 30 g coriander roots, chopped
- 20 g Basil leaves
- 1200 g fish/chicken stock
- 20 g fish sauce
- 50 g dark palm sugar
- 200 g Coconut cream Powder
- 20 g cornflour mixed to a paste with a little water
Coconut Foam
- 200 g Coconut cream Powder
- 100 g coconut cream
- 1/2 tsp Tuckeroo Lemon Myrtle
- 1 leaf gelatin - softened

Place ginger, garlic and chilli into mixing bowl and chop 3 sec/speed 7.
Add remaining incredients and saute 10 min/100C/speed 2. Scrape down sides of mixing bowl with spatula.
Blend 3 sec/speed 9. Scrape down sides of mixing bowl with spatula.
Add all ingredients and cook 15 min/100C/speed 1. At 12 min at cornflour through hole in lid whilst simmering.
Strain soup through sieve.
Soak gelatine in iced water 15 min to soften.
Place coconut cream, cream and lemon myrtle into mixing bowl and heat 8 min/Varoma/speed 2. Allow to infuse for 5 minutes.
Add gelatin and mix 20 sec/speed 2.
Strain through a fine sieve. You can serve foam using a whipping cream gun. Add foam to whipping cream gun, charge with gas as directed by instructions and chill.
Serve soup hot in tall elegant classes topped with the cold foam.

I'm wondering whether the foam could be whipped withe the butterfly if one didn't own a Cream Siphon.
