  • 500 g dark couverture chocolate 70% (or 50%)
  • 2 tsp Tuckeroo Peppermint Gum

Recipe's preparation

    The Chocolate
  1. Place chocolate into mixing bowl and mill 5 sec/speed 8

  2. Scrape down sides of  bowl using spatula and melt 5 min/50C/speed 2.

  3. Scrape down sides of bowl using spatula and mix 5 min/37C/speed 2.

  4. Add peppermint gum and mix 2 min/speed 2.

  5. To form lollipops
  6. Fill piping bag with chocolate.  Pipe 2-3cm discs of the chocolate onto a plastic sheet, insert the satay sticks, and then top with another plastic sheet.

  7. Press down very gently. Repeat with all the chocolate, allow to set in the fridge. 

  8. Serve lollipops stuck into an orange or other fruit.

    Ingenious!  I haven't tasted the peppermint gum version but have followed the method demonstrated by you and was very impressed with how neat and cute the choc lollypops were and how quickly they were ready.  Look as attractive as they tasted yummy.  Many thanks!  Inspiring.
