Ingredients

Apple-Cinnamon Choc Chip Muffin

  • 2-3 apples, approx 280g
  • 300 g self-raising flour
  • 150 g plain flour
  • 1/2 level tsp bicarbonate of soda
  • 200 g brown sugar
  • 2 eggs
  • 370 g Milk
  • 180 g Butter, soft
  • 1 level tsp ground cinnamon
  • 1 pinch salt
  • --- dark chocolate chips, to taste

Recipe's preparation

    Preparation
  1. Preheat oven to 180C. Line 2 x 12-hole muffin trays with cupcake liners and set aside.
  2. Peel and roughly chop apples, insert into mixing bowl and chop speed 4.5 for 5-8sec, set aside
  3. Add butter, brown sugar, milk and eggs and mix for 10sec speed 4. Scrape down sides with spatula. Mix again if necessary.
  4. Add self-raising flour, plain flour, bicarbonate of soda and cinnamon, mix for 10sec speed 4. Scrape down side of the bowl.
  5. Add reserved apples and choc chip and combine for 10sec Counter-clockwise operation"Counter-clockwise operation" speed 3-4
  6. Place mixture into prepared muffin tray and bake for 20min or until golden brown.

Tip

These muffins are also super delicious with raspberry and white choc chip instead of apple cinnamon.
