  • 1 brown onion
  • 150 g bacon

Recipe's preparation

    Preparation
  1. Preheat oven to 180C. Grease 2 x 24 mini muffin try and set aside.
  2. Place cheese into mixing bowl and grate 4-7sec/speed 6, until cheese is evenly grated. Transfer into a midium bowl and set aside.
  3. Place zucchini, carrot and onion into mixing bowl and grade 8sec/speed 4.5, add to the cheese and keep aside.
  4. Add bacon to bowl and shredder 3sec/speed 6
    Returne reserved cheese and vegetables to the mixing bowl and add eggs, oil and GF self-raising flour, combine 15secCounter-clockwise operation"Counter-clockwise operation" speed4
  5. Fill mini muffin trays with an even amount of mixture and bake for 20min or until golden.

These savory mini muffin are super tasty, hot or cold.

    These are amazing... I absolutely love them and my 7 yr old asked for more as soon as he tried them. So good

    These were absloutely delicious, light fluffy and not too greasy. I made 12 larger ones and cooked them until golden brown. They were throughly enjoyed by the whole family. Ours didn't make it to the freezer either.

    Alicia R:To be honest, I never had the chance to freeze them! They always dissppear to fast. But I imagine they would be just like little quiches, perfectly fine to freeze. I do prefer mine heated up.

    How well do these mini muffins freeze? Are they still yummy once defrosted or would they need to be heated?
