- 110 g Milk
- 75 g sugar, white or raw
- 60 g Butter
- 1 --- egg
- 2 --- bananas, use small over ripe bananas
- 1/2 tsp bi-card soda
- 210 g Self Raising Flour

Pre-heat the oven to 180 degrees C
Line cup-cake tins with papers or if making a large cake, line a loaf tin.
Weigh the sugar into the bowl and mill on speed 9 for 10 seconds
Add all the other ingredients and mix for 5 seconds speed 6 scrape down the sides of the bowl and mix for another 5 seconds speed 6
Divide the mix into cup-cake papers (do not over fill about 3/4's full) or pour into a prepared loaf tin for a large cake, bake the cup-cakes for 10 minutes or until golden and cooked through or for 35 minutes for a large cake.
When cakes are cool ice with frosting.
Tip
This cake works best with very over ripe bananas, when the skin has turned black. If you think they are too far gone they will be just right.
Cooking times will vary according to what size tins you use I used small cup cake tins (the mix made 36) that took 10 minutes but larger cakes will require more cooking time.
