Ingredients
Cupcakes
- 130 g raw sugar
- 125 g Butter
- 1 tsp vanilla
- 2 eggs
- 125 g Milk
- 230 g SR flour
Frosting
- 100 g icing sugar (or milled raw sugar)
- 25 g Butter
- 100 g cream cheese
- 2 tsp cocoa powder
- hundreds & thousands, optional

1. Add raw sugar to TM bowl & mill 5 sec / sp9
2. Add cubed butter & remaining ingredients, combine 3 sec / sp5 then remove lid & scrape down bowl. Mix an additional 5 sec / sp6 or until mixture is smooth and has changed colour.
3. Divide batter evenly between 36 mini muffin holes (grease & line holes with paper cases first).
4. Bake 180 degrees aprox 20mins (medium) / 12mins (mini) or until golden and spring back when lightly touched in the middle.
5. Ice as desired once cool.
1. Blend all icing ingredients together (except 100s & 1000s!) 5 sec / sp 6. Scrape down & repeat if necessary until a smooth consistency is achieved

Tip
These work well to send to school with your birthday child to share with their class-mates. Get the kids to help by letting them dip the freshly-iced cupcake into a bowl of sprinkles.

followed to a tee - was sooooo delicious!!!! Not sure if there will be any left by tomorrow! the cake tastes the way cake used to taste! i'll def add to my favourites and make again. the balance of sweetness was perfect.
Mine came out a little cone shaped so i will try a slightly cooler oven next time for longer. I did 12 cupcakes for about 15 or so minutes, so probably cooked too fast.

Baked these today for my daughter to take to school tomorrow. They are very easy and have turned out nice and light and fluffy. They do rise significantly - so I think I over filled the cases a bit too much. Instead of small/medium cupcakes, I do have nice large ones now. Even if I filled the cases a bit less, not sure the batter would make 24? But they are so easy, it would be no trouble to whip up another batch. Next time, I’m just going to double the quantities and have a few left over for home.
I also reduced sugar to 90g, I also mixed longer on speed 6 (approx. another 20 seconds) and only had my oven on 165 degrees (but I do know my oven runs hot).
I think this this will be my new ‘go to’ recipe for easy cupcakes.
I didn’t try the frosting recipe. I always use the buttercream icing recipe from the ThermoBliss blog.
Great recipe! I made 2 double batches of these today for a school birthday party and family tea tomorrow. I think I got a total of about 50 standard cupcakes, but a few have vanished, so it's a bit hard to tell! I halved the sugar and blended the mix for about a minute on 5 and then 6 and they taste brilliant, light and fluffy and well risen.
Have had great success with these, made several batches recently, in mini and patty pan. I'll agree with others, they are great for taking to school for birthdays. I did reduce sugar to 100g and temp to 160c. Only half fill pans to rise nicely.
So easy, thank you! I reduced my sugar to 80g and did another 3 sec/speed 6 at the end.
