Ingredients

Best Lemon Slice

  • 3-4 lemons
  • 500 grams Marie biscuits
  • 250 grams Butter, cut into 3cm pieces
  • 400 grams condensed milk
  • 110 grams dessicated coconut

Icing

  • 30 grams Butter
  • 300 grams icing sugar
  • 30 grams lemon juice

Recipe's preparation

    Slice
  1. Peel lemons and add zest to bowl. Chop 10 seconds, speed 9. Scrape down sides and repeat until fine zest achieved.
  2. Add 1 packet of Marie biscuits and crush 3 seconds, speed 4. Add remaining 250g and mix 5 seconds, speed 4 using spatula to assist. You may need to break some biscuits by hand (but the beauty of this slice is the chunks of biscuit). Pour the biscuit mix into a seperate bowl and set aside.
  3. Add can of condensed milk and butter. Melt together 3 minutes, 80 degrees, speed 2 or until butter has fully melted.
  4. Add coconut to butter mixture. Add juice of 2 lemons. Place biscuit mix back into bowl and mix 20 seconds, speed 4 Counter-clockwise operation"Counter-clockwise operation" Reverse. Use spatula to assist mixing and extend time if necessary.
  5. Flatten slice into lined slice tray and refrigerate.
  6. Icing
  7. Place all ingredients into clean bowl and mix 10 seconds, speed 4. Repeat if necessary and spread onto slice. Sprinkle with coconut if desired.

Tip

This larger quantity slice fits in lamington tin (30 x 20 x 2.5cm) or makes a tall slice in a 20 x 20cm tin.
