Ingredients

BUTTERMILK BIRTHDAY CAKE

  • 200g sugar
  • 250g plain flour
  • 200g buttermilk
  • 1 &1/2 teaspoons baking powder
  • 1/2 teaspoon bicarb soda
  • 1/4 teaspoon salt
  • 125g soft butter
  • 2 teaspoons vanilla extract
  • 3 eggs

Butter Icing

  • 700g icing sugar
  • 300g Butter
  • 1 teaspoon vanilla extract
  • 40g Milk

Recipe's preparation

    BUTTERMILK BIRTHDAY CAKE
  1. Heat oven to 180 degrees.

    Place sugar into the TM bowl & blitz for 5 secs speed 10 to make caster sugar. Add the butter & butterfly & mix for 1 min speed 4.

    Keep the butterfly spinning on speed 4 & drop in one egg at a time, till combined. then add in the remaining cake ingredients. mix on speed 4 for 5 secs, scrape down sides of the bowl & then mix for another 5 secs on speed 4.

    Pour mixture into a greased & lined 23cm springform cake tin & bake for 40 mins or until cooked through. 

    Allow to cool completely before icing with the butter icing.

  2. Butter Icing
  3. Add all ingredients & insert the butterfly & mix for 1 -2 mins on speed 4, until light & fluffy.

Tip

I have made this cake many times while my son was growing up & now he has almost outgrown it!!

    Thanks for the recipe it was easy and quick. I added in some dried cranberries and a couple of extra bits to help liven it up a bit tmrc_emoticons.)

    I needed to use the buttermilk from making butter in the thermomix and this cake was perfect.
    I added orange peel with raw sugar and made it into caster sugar. I also added 1/2 teaspoon of ground cardamom.
    I used a 20 cm springform pan and it took 50 minutes on fan bake to cook.
    I didn’t make the icing (it does sound like a generous amount of icing) I used an orange icing glaze instead.
    I will make it again it was easy and had a silky smooth texture.
    *Also I used 1/2 teaspoon of baking powder and 1/4 teaspoon of bicarbonate soda. The ingredient list isn’t clear so I referred to the original Nigella Lawson recipe.

    My husband wanted a butter cake for his birthday party so I used this recipe and it was a hit. Nice and moist and good texture and taste. It took a bit longer than 40 minutes to bake through. I didn't make the butter icing as we had other icing options. Thank you for the recipe.

    Not sure where I went wrong, but didn't like the icing at all

    I followed the recipe exactly as it is listed, however the icing came out gritty, and as for making the 700g amount! I was left with a huge amount of icing left over as I only iced the top of the cake ---  obviously my error in not realising it was meant to iced all the way around.

    The cake itself was ok but I have found nicer recipes here in the community so was disappointed

    I made the cake. I have a 5 year old and a 2 year old and have used a different cake recipe every year for their birthdays. I'm going to stick with this one...LOVED IT!! Thanks so much.

    I made this cake (not the icing) for my daughter's birthday. I decided to give spelt flour a try instead of normal flour. The cake was lovely and moist and I received many wonderful comments. Thanks for sharing. Cooking 1
