Ingredients

Cassava Flour Soft Cinnamon Doughnuts (gluten free) – Mez Thearle Thermomix Girl

  • 30 g rapadura or coconut sugar
  • 1/4 tsp ground cinnamon
  • 40 g rapadura or coconut sugar
  • 30 g Avocado Oil
  • 120 g cassava flour
  • 2 tsp Baking Powder, gluten free
  • 1 pinch salt
  • 2 pinches ground cinnamon
  • 120 g Milk of choice
  • 1 egg

Recipe's preparation

    Cinnamon Sugar
  1. Place sugar into mixing bowl and mill 4 sec/speed 9.
  2. Add cinnamon and mix 3 sec/speed 2. Transfer into a bowl or ziplock bag and set aside.
  3. Doughnuts
  4. Preheat oven to 180°C. If needed, spray a 12-hole doughnut tin with oil and set aside. (The rose gold tray does not need to be sprayed).
  5. Place sugar into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula.
  6. Add oil, flour, baking powder, salt, cinnamon, milk and egg and mix 20 sec/speed 4.
  7. Scrape down sides of mixing bowl with spatula and mix 5 sec/speed 4. Transfer into cupcake pen.
  8. Fill prepared mould halfway with mixture, then bake for 10 minutes (180°C). Allow to cool in tin for 5 minutes. While still warm, place doughnuts into bowl or bag with cinnamon sugar and toss to coat completely. Serve warm.

Tip

I have successfully used both Three Spades and Honest to Goodness cassava flour in this recipe.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
