Ingredients

  • 150 grams raw sugar
  • 250 grams banana
  • 250 grams buttermilk
  • 2 eggs
  • 290 grams wholemeal plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 125 grams milk choc bits

Recipe's preparation

  1.  


  2. Preheat oven to 170C

  3. Mill raw sugar into caster sugar 3 secs, speed 9. Set aside.

  4. Add banana to bowl and mash 3 secs, speed 4.

  5. Add buttermilk and eggs. Mix 3 secs, speed 4.

  6. Add milled sugar back into bowl. Also add flour, baking powder, bicarbonate of soda and cinnamon. Mix 10 secs, speed 4. Scrape down sides of bowl.

  7. Add choc chips and mix Counter-clockwise operation"Counter-clockwise operation" 10 secs, speed 3.

  8. Pour into lined loaf tin and cook in preheated oven for 50 minutes or until skewer comes out clean. 

  9. Stand in pan for 10 minutes before turning out onto rack. It can be lightly dusted with icing sugar or served as is either warm or cold.

Tip

I use 2 large bananas for this recipe.

It's a good use for the leftover buttermilk if you make your own butter.

Leftovers are yummy toasted with coffee for breakfast - it may fall apart in the toaster to toast under the grill
