Ingredients
Cake
- 500 g water
- 1 tsp instant coffee granules
- 250 g Butter, softened
- 70 g cocoa powder, 70% cocoa
- 4 eggs
- 1 tsp Vanilla Paste
- 200 g brown sugar
- 200 g caster sugar
- 350 g plain flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
Buttercream
- 500 g icing sugar
- 300 g Butter, chilled from the fridge
- 80 g cocoa powder, 70% cocoa
- 90 g Milk
- 1 tsp Vanilla Paste

- Preheat oven to 150ºC.
- Add the water, coffee (if using), butter & cocoa powder to the mixing bowl & heat / melt for 3 minutes / 80 degrees / speed 2. Remove lid & allow to cool. (This will take around 10 minutes, ideally you want the temperature to drop below 50ºC or below.
- Meanwhile, grease & line two or three cake tins.
- Once the mixture has cooled, add the eggs & vanilla bean paste. Mix for 5 seconds / speed 4.
- Add the sugars, flour, baking powder & bicarb soda. Mix for 30 seconds / speed 4.
- Pour batter into prepared cake tins (the batter is quite runny so can be poured straight from TM bowl).
- Bake in preheated oven for 30 minutes, or until a skewer inserted in the middle comes away clean.
- Allow to cool in the tin for 5 minutes before carefully turning out onto wire rack to cool completely.
- Add icing sugar to clean & dry mixing bowl. Blitz for 10 seconds / speed 9. Set aside.
- Chop butter into pieces & add to mixing bowl. Cream for 30 seconds / speed 5.
- Add the icing sugar, cocoa powder, milk & vanilla. Mix for 30 seconds / speed 5.

Tip
Batter will be enough for 3 x 8in cake tins or 3 x 6in tins for a taller cake. Or 2 x 8 or 9in cake tins.
Coffee is optional, it will give a more chocolately flavour. You can also use a shot of espresso, or a cup of strong brewed coffee, but be sure to reduce water by the same volume of coffee you use.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
