Ingredients
Slice
- 210 grams plain flour
- 200 grams sugar
- 25 grams cocoa powder
- 250 grams Butter
- 1 teaspoon vanilla essence
- 110 grams Desiccated Coconut
Chocolate icing
- 400 grams pure icing sugar
- 25 grams cocoa powder
- 60 grams Butter
- 2 to 3 tablespoons hot water
- 20 grams Desiccated Coconut

Preheat oven to 180 degrees celcius. Grease and line a 4.5cm deep, 21x32 lamington pan with baking paper.
Melt butter 2.5 minutes/70 degrees/speed 1.
Add flour, sugar, cocoa, vanilla and coconut. Combine 10 seconds/"Counter-clockwise operation" /speed 3. Scrape down sides and mix again, 5 seconds/"Counter-clockwise operation" /speed 3.
Press into base of prepared tin.
Bake 15 to 20 minutes. Allow to cool in the pan.
Melt butter 2 minutes/70 degrees/speed 1.
Add icing sugar, cocoa and 2 tablespoons of hot water. Stir 15seconds/speed 3. Add more water and stir again if needed.
Spread evenly over slice. Sprinkle with remaining coconut. Cut into squares. Store in airtight container.

Yum! I didnt make the full quantity of icing but it was definitely enough. i put 100's + 1000's on top instead of coconut
This was fantastic. Very rich but easy to make. Will be making this again...
Made again with just half the icing - which was plenty. I used raw sugar in the icing too, just made sure it was stirred through enough to dissolve well.
