Ingredients
Mud Cake
- 165 g Butter
- 165 g dark chocolate, broken into pieces
- 20 g instant coffee granules
- 120 g water
- 95 g Self Raising Flour
- 95 g plain flour
- 40 g Unsweetened Cocoa
- 3/4 tsp Bi-carb soda
- 360 g caster sugar
- 3 eggs
- 25 g vegetable oil
- 75 mL Buttermilk
Ganache
- 600 g dark chocolate, broken into pieces
- 300 mL Pure (whipping cream)

Firstly, if using raw sugar, pre-mill in TM bowl for 3 seconds, speed 9, to make your caster sugar. Set aside.
Place butter, chocolate, coffee and water into TM bowl, and melt for 4 minutes, 60 degrees, speed 2. (You can pre-grate the chocolate if you like before adding the other ingredients but I can never be bothered!!)
Add the Self Raising Flour, Plain Flour, Sugar, Bi-Carb and Cocoa, then the eggs, Vege Oil and Buttermilk, and mix for 10 seconds, speed 5.
Place into cupcake cases, or one large cake tin, and bake in a 160 degree oven for approx 20 minutes (cupcakes) or 1 hour (large tin).
Place 300g of the chocolate into the TM bowl, and grate for 10 seconds on speed 8. Set aside, and repeat with the remaining chocolate.
Add the cream to the bowl, along with both batches of grated chocolate, and melt for 7 minutes, 60 degrees, speed 2.
Use ganache as is to pour over a large cake, or wait for it to thicken for spreading or piping consistency.

Agreed, I left out the sugar because I followed the directions and it was only when I tasted the batter and realised it tasted bitter that I checked and added the sugar. Hopefully they work???

No where in the recipe it said to add sugar, so I placed it in when I added flour, I'll let you know if it worked in 20 mins!
