Ingredients

  • 100 g Butter, softened
  • 100 g Maple syrup
  • 1 egg
  • 100 g rolled oats
  • 30 g Desiccated Coconut
  • 150 g wholemeal plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarb soda
  • 100 g dark chocolate, cut into pieces

Recipe's preparation

    Method
  1. 1. Preheat oven to 180C. Line two baking trays with baking paper and set aside.

    2. Place butter and syrup into mixing bowl and mix 20 sec/speed 4. Scrape down sides of mixing bowl with mixing bowl and repeat 20 sec/speed 4.

    3. Add 1 egg and mix 10 sec/speed 6.

    4. Add rolled oats, coconut, flour, baking powder and bicarb soda and mix 10 sec/reverse/speed 4. Scrape down sides of mixing bowl with spatula and repeat 10 sec/reverse/speed 4.

    5. Place approx. 20 small spoonfuls of mixture onto prepared trays and flatted with a fork, allowing space for biscuits to spread during baking.

    6. Bake for 15-18 minutes until golden brown. Remove from oven and allow to cool on trays for 5 minutes. Transfer to a wire rack and allow to cool completely.

    7. Place dark chocolate into clean mixing bowl and grate 10 sec/speed 8. Scrape down sides of mixing bowl with spatula. Heat 2 min/50C/speed 3. Transfer to a bowl.

     

    8. Dip half of each biscuit into the melted chocolate, allow to set on wire rack in the refrigerator.

Tip

You can drizzle melted chocolate over cookies, or dip their bottoms in the chocolate.

    These biscuits are sooooooooo yummy. I have just finished my second batch as requested by my kids and husband. I didn't have any maple syrup left so i used 80g rapadura sugar and also half Oates an half quinoa. Delish.
