Ingredients

Dough

  • 65 grams Butter, From EDC page 17
  • 240 grams full cream milk
  • 650 grams bakers flour
  • 2 eggs
  • 1 teaspoon sea salt
  • 100 grams sugar, or can replace with 50g Agave Syrup
  • 10 grams dry yeast

Filling

  • 100 grams pecans
  • 250 grams Dark Brown Sugar
  • 65 grams Butter, Room Temperature - refer EDC page 9
  • 3 teaspoons cinnamon

Icing 1: Cream Cheese Icing

  • 250 grams raw sugar, or can use 125 Agave Syrup
  • 55 grams Butter
  • 125 grams cream cheese
  • pinch salt
  • 1/2 vanilla bean or 1tsp vanilla bean paste or 1/2 teas pure vanilla extract

Icing 2: Sugar Icing

  • 225 grams raw sugar
  • 3 tablespoons water

Recipe's preparation

    DOUGH
  1. 1. Place Butter and Milk into TM Mixing Bowl.


        Heat 3min/50*/Speed 1


     


    2. Add Bakers Flour, Eggs, Sea Salt, Sugar or Agave Syrup and Yeast Mix 15sec/Speed 7 to combine all the ingredients 


     


    3.  Then knead mixture 2min/Closed lid/dough mode


     


    4. Turn dough out on Thermomat (if don't have then into a bowl      covered) and prove for 1 hour or until the dough has doubled in size


     


    5. Once proved knock down and roll out dough on Thermomat (or lightly floured working surface) to 35cm  x 50cm rectangle.  Let the dough rest whilst preparing the filling


     


     


    FILLING


     


    1. Place Pecans in TM mixing bowl Chop 3sec/Speed 6 (or to desired size).  Set aside


     


    2. Add Dark Brown Sugar, Butter, Cream Cheese, Cinnamon to TM Bowl mix 12sec/speed 4


     


    3. Spread filling all over dough mixture evenly.  Sprinkle the pecans evenly over the filling and dough


     


    4. Roll the dough up from the longest side, using spatula cut dough evenly into 12 rolls


     


    5. Prepare baking tin lined with baking paper lightly greased and place rolls into it.  Cover and let rise for 30mins


     


    6. Preheat oven 200*C


     


    7. Bake scrolls in preheated oven for aproximately 15mins.  Whilst scrolls baking prepare icing


     


    ICING


     


    There are 2 types of icing that can be used... your choice!


     


    Cream Cheese Icing


     


    1. Place Sugar and Vanilla bean (if using) 20sec/Speed 9


     


    2. Add Butter, Cream Cheese, Salt, Vanilla Bean Extract or Vanilla Essence (if using).  Heat 4mins/37*/Speed2


     


    Sugar Icing


     


    1. Place Sugar in TM mixing bowl Mill 20sec/Speed 9


     


    2. Add water to sugar in TM mixing bowl and mix 10sec/Speed 4


     


    Spread either icing on rolls whilst they are still hot....


    These are totally addictive... can't stop at one... Enjoy!!!


     

Tip

Great Accessorie to also use is of course the one and only..

Thermomat

 

To make nut free just leave out the Pecans and can add Currants, Sultana's, Cranberries or just enjoy as Simple Cinamon Scrolls

    just made these in my new thermy absolutly yummy i left out the cream cheese and added apples instead i should have drained the juice from apple mixture but was still yummy Cooking 7 Cooking 7

    These are delicious...especially fresh out of the oven. I've been told I can definitely make them again. Next time I'll lessen the sugar in the pecan mix and icing as they're a bit too sweet for me..but that's just personal preference  Cooking 7

    Love this recipe, I didnt have pecans so just omitted but still tasted great. I used 125g cream cheese and it worked well. I also prefer the sugar icing . These don't last long at our house!

    Totally yummy,the whole family loved them. I added Blueberries to the mix.   I had heaps of filler...next time i would only use half of the filler...as i had a little trouble keeping mine together as by the time i had rolled mine the exta filler was coming out and this stop me from putting dough to dough to keep together for baking...think i might do a double batch of dough and make two lots..... many thanks.

    You must try them!!!

    These were fabulous, especially straight out of the oven.  If you have more restraint than me they also kept well for lunchbox fillers.
