Ingredients

Cupcakes

  • 120 g Butter
  • 2 eggs
  • 100 g Milk
  • 1 tsp vanilla essence
  • 120 g sugar
  • 120 g Self Raising Flour
  • 30 g cocoa powder
  • 1 tsp baking powder
  • 12 Oreos

Cookies and Cream Frosting

  • 100 g plain flour
  • 250 g Milk
  • 1.5 tsp vanilla extract
  • 250 g Butter
  • 250 g sugar
  • 150 g Oreos, One Standard Box
  • 12 Mini Oreos, Garnish (Optional)

Recipe's preparation

    Cupcake
  1. This is the "Too easy chocolate cake" recipe from the Everyday Cookbook. Divided into cupcakes instead.

  2. Preheat oven to 180 degrees and line cupcake tin with 12 cupcake patty pans.  

  3. Place butter in TM Bowl and melt for 2 minutes at 60 degrees on speed 4

  4. Add all remaining ingredients and mix for 30 seconds on Speed 5

  5. Place whole oreo biscuit in the base of a patty pan, then place mixture over it to fill cupcake liner 2/3 of the way up.

     

    You could also add some cake mixture, then the oreo and then more cake mixture so the hidden oreo is in the middle of the cupcake.

     

    Either way works fine, it's just easier to check the cake is cooked properly with the cookie at the bottom.

  6. Bake at 180 degrees for 15 minutes or until wooden skewer inserted into cake comes out clean.

  7. Allow to cool completely before icing.

  8. Cookies and Cream Cupcakes
  9. Add your packet of Oreos into the TM bowl and blitz on Speed 9 for 30 seconds or until all cookies are now crumbs. Set aside for use later, no need to clean bowl.

  10.  

    Add flour and milk to TM bowl and cook at 90 degrees for 4 minutes on Speed 4. Mixture must be quite thick (pudding like), so if it is still runny even once it's cooled slightly give it another minute or 2. 

     

    Transfer finished mixture to a bowl and allow to cool completely in the fridge. It can even be made the day before and kept covered in the fridge overnight if you don't have time on the day to allow it to cool entirely.

     

  11. Put butter and sugar in TM Bowl and mix together on speed 5 for 20 seconds.

     

  12. Scrape down bowl and add butterfly, cream together completely on speed 4 for 30 seconds.

     

  13. Add your cooled flour/milk mix to the TM bowl with butter and sugar and mix on speed 4 for 60 seconds. It needs a good mix, it should then be VERY fluffy and resemble whipped cream.

     

  14. Add your reserved Oreo crumbs to the frosting and mix for 30 seconds on Speed 3 or until completely combined.

  15. Add your frosting to a piping bag or spread over cooled cupcakes and garnish with a mini oreo per cupcake. They taste as good as they look.

    I did a trial run for my boy upcoming birthday party. It took about 25 mins to bake in oven and I was skeptical about icing (boiling milk and flour first?) and I forgot about the vanilla too- doesn’t say when. But these are delicious and so easy to make. Thanks for the recipe

    I only made the icing but wow... the only part I got confused with was the vanilla extract it doesn't say when to add it so I winged it

    These are sensational, my daughter has requested a double batch for her birthday this week. Not sure what she's planning on doing with them, but they are delicious enough to eat 24 by ourselves!!
