Ingredients
Custard filling
- 500 grams Milk
- 3 egg yolks
- 50 grams sugar or sweetner of your choice
- 50 grams cornflour
- 1 pinch of salt
- 1 tbsp Vanilla Paste
- 1 egg
Shortcrust pastry (Mürbeteig)
- 250 grams flour
- 130 grams Butter
- 60 grams sugar of sweetner of your choice
- 1 egg
Crumble Topping (Streusel)
- 300 grams flour
- 200 grams Cold Butter
- 100 grams sugar or sweetner of your choice
- 1 pinch of salt

- Put all ingredients (except the egg, will need at the end) for the custard filling into "Closed lid" "Counter-clockwise operation" 90C/7min/speed 3. Transfer into a bowl and let cool.
- Put all the ingredients for the shortcrust pastry in the "Closed lid" "Dough mode" 3 min. Wrap in cling film and put in the fridge.
- Put all ingredients for the crumble into the "Closed lid" "Dough mode" 2 min, add mixture into another bowl.
- Preheat oven to 180-200C/Fan Cooking. Grease baking tin (approx. 26-28cm) roll out 2/3 of the dough into the base of your springform tin. Place the rest of the dough around the sides and press up against walls of your baking tin. This will give edge of 3cm high.
Add the cooled custard mixture into "Closed lid" add egg 20 sec/speed4
Now sprinkle the cake with the crumble dough
Bake the cake for 35-40 min at 180-200C.
Allow to cool well before cutting.

Tip
You can add fruit of your choice into the custard mixture and then sprinkle with crumble.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
