Ingredients

Muffins

  • 115 grams rolled oats
  • 190 grams wholemeal self-raising flour
  • 20 grams Shredded coconut
  • 50 grams granulated sugar substitute, (SPLENDA)
  • 1 tsp baking powder
  • 140 grams unsweetened apple puree, TM recipe (pg 60 EDC)
  • 60 grams skim milk
  • 1 egg
  • 2 egg whites
  • 40 grams golden syrup

Recipe's preparation

    Muffins
  1.  

    1. Preheat oven to 160C (fan-forced). Spray patty pan with cooking spray.
    2. Reserve 1Tbs of the oats. Mill remaining oats and flour 30sec/Sp9
    3. Add coconut, SPLENDA and baking powder 10 sec/Sp 4 Set Aside
    4. Put apple puree, milk, egg, egg whites and golden syrup in bowl. Whisk with butterfly attached 30sec/Sp 4 remove butterfly.
    5. Add oat mixture Reverse 5-10 sec/Sp 2 (until just combined)
    6. Divide mixture between patty pans. Sprinkle reserved oats over. Bake for 12-15 min or until a skewer inserted comes out clean. Set aside in the pan for 5 min. Transfer to a wire rack to cool completely.
