Ingredients
Cake Mixture
- 250 g Raw carrots, (chopped 3 cm)
- 4 eggs
- 110 g Grapeseed Oil
- 150 g Rapadura Sugar
- 4 drops stevia
- 100 g spelt flour
- 100 g almond meal
- 20 g arrowroot flour, (or Cornflour)
- 1 tbsp baking powder
- 1 teaspoon bicarbonate of soda
Icing
- 8 medjool dates, pitted
- 2 tbsp cacao powder
- 40 g coconut oil
- 100 g water

Pre-heat oven at 180 Degrees.
Place carrots into the TM bowl and grate at 15 sec / SPEED 9.
Add eggs, sugar, oil and mix for 1 min / SPEED 6.
Add remaining ingredients and mix for 15 sec / SPEED 3.
Coat baking tray with flour, pour mixture into it and bake for approximately 40 min. Remove from oven and wait until cools down before remove from baking tray.
- Place dates with water, coconut oil and cacao powder into the mixing bowl and process for 1-2 minutes / speed 9.
Cover your cake with Frosting mixture.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
