Ingredients

Biscuits

  • 150 g Nuttelex
  • 55 g Rapadura Sugar, (Or caster sugar)
  • 1 tsp Vanilla Paste
  • 150 g gluten free flour
  • 70 g tapioca flour
  • 25 g cacao powder, raw, (Or cocoa powder)

Filling

  • 30 g Nuttelex
  • 70 g icing sugar
  • 1 drop Peppermint Extract
  • 1/2 tsp dairy free milk

Recipe's preparation

    Biscuits
  1. 1. Place Nuttelex, sugar and vanilla paste in Closed lid"Closed lid"
    2. Mix 10sec, speed 4 MC in.
    3. Add gluten free flour, tapioca flour and cacao powder to Closed lid"Closed lid" and mix 10 sec, speed 4 MC in.
    4. Roll teaspoons of dough into balls and place on a lined baking tray. Press a fork gently into the middle of each biscuit. If the fork sticks you can dust it lightly with tapioca or gf flour.
    5. Bake at 180°c for 10-12 min. Be very careful not to over cook!

  3. 1. In a clean and dry Closed lid"Closed lid" mix ingredients together 20sec, speed 5 MC in.
    2. Check if more icing sugar is needed the mix again 10sec, speed 5 MC in.
    3. Ice half of the cooled biscuits and sandwich together.

    For best results, leave in the fridge to set before eating!

Tip

These biscuits are great plain too! You could sprinkle them with (allergy friendly) sprinkles prior to baking for an easy allergy friendly birthday party option.

I used my All Purpose Gluten Free flour, which can also be found here on Recipe Community.

    These are delicious! I made them to big so only got 8... will count better next time! Had to add a little extra nuttalex and mix a bit longer but then the dough was easy to work with! Used water in the cream for the middle! Perfect!
