Ingredients
Gluten Free Chocolate Cake
- 225 grams gluten free flour, I use Wild Sourdough GF Flour
- 80 grams Dutch cocoa powder (unsweetened)
- 350-400 grams sugar, cake is not too sweet
- 1 tsp Baking Powder, gluten free
- 1 tsp bicarbonate of soda
- 3 espresso coffee shots, top up with boiling water to make 250 mls
- 3 eggs
- 125 grams vegetable oil
- 250 grams Milk
- 1 level tsp Vanilla Paste
- 2 level tbsp apple cider vinegar, add to milk

- Add flour, cocoa, sugar baking powder and baking soda to jug. 1 mins speed 4.5. Scrape sides
Add coffee, eggs, milk and vanilla paste. 3 mins speed 5, scrape sides and mix again for 2 mins
Mixture will be quite runny. Don't stress.
Pour cake into tin and bake 160C for 1 hour 15 mins until skewer comes out clean.
When cool spread with dark choc ganache or chocolate icing.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
