Ingredients
Cake
- 120 grams sugar
- 120 grams Coconut
- 65 gram gluten free flour
- 1 teaspoon GF baking powder
- 20 grams raw cacao powder
- 120 grams coconut milk
topping
- 50 grams sugar
- 20 grams raw cacao powder
- 40 grams cornflour
- 500 grams coconut milk, 1 can topped up with water
- 50 grams coconut threads

Place sugar, coconut, gluten free flour, cacao powder and baking powder in bowl and mill 10 seconds at speed 9. Add coconut milk and mix 20 seconds on speed 4 to 5. Pout into a cake tin (or divide between 2 sandwich cake tins) and bake at 180 degrees until cooked through, test by pressing gently in the middle and if it springs back it is cooked, about 20 minutes for sandwich tins or 30 for cake tin. Take out and leave to cool for about 10 minutes before gently removing from the tin and leaving to cook on a wire rack.
Place sugar, cacao powder, cornfloue and coconut milk into bowl and cook 9 minutes at 90 degrees at speed 2. Add coconut threads and mix 5 seconds at speed 2. Cool to room temperature then use to sandwich two cakes together and all over the top. There will be lots left over to serve with the cake. Or just eat on it's own. This is not very sweet so add more sugar if you prefer.

Tip
I use Orgran gluten free flour as it does not have whey in it.
I have also used 1 can of coconut cream by adding water to make it to 620 grams of a milk consistency.

Hey there, with the 120 grams of coconut in the cake ingredients, is that fresh coconut or desicated or it doesn't matter? Thanks
