  • 70g hazelnuts or almonds
  • 80g coconut sugar
  • 55g coconut flour
  • 50g melted butter
  • 1tsp Vanilla paste
  • 3 large egg whites
  • 2 medium plums

Recipe's preparation

  1. Place hazelnuts in TM bowl and mill 8 seconds/ Speed 8

     

    Add coconut sugar and flour  and mix 5 seconds/ speed 5

     

    Remove from TM bowl and set aside

     

    Clean and thouroughly  dry TM bowl

     

    Place butterfly in TM bowl with egg whites.

    Beat Speed 3.5 for 4 minutes

     

    Gently fold eggwhite mixture into reserved  dry ingredients.

    Fold in melted butter and vanilla ( batter will deflate slightly)

    Spoon into greased muffin tins.

     

    Insert plum slices into batter so they are half in the batter.

     

    Bake 15-20 mins until slightly firm to touch.

     

    To serve sift icing sugar over cooled cup cakes.

Tip

Try other seasonal fruit - nectarines, apricots, peaches.

I developed this recipe for family who are gluten intolerant and also allergic  to egg yolk. Now they can eat cake

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    The flavours were lovely (I used almonds and plums), however they didn't stick together very well. Not sure if it was my mini muffin tins (which I greased well), or the gluten free flour which I'm not used to cooking with. The recipe doesn't give tin size - mine were mini, and they seemed to need a lot longer than 20 minutes. Might have to try again...
