Ingredients
Base
- 70 gram Desiccated Coconut
- 100 gram almond meal
- 70 gram almond butter
- 50 gram honey
- 1 level tsp vanilla extract
- pinch of salt
Filling
- 80 gram Cashew Butter
- 50 gram honey
- 25 gram Maple syrup
- 60 gram coconut oil, melted
- 3 passionfruit pulp

- Line a square 18cm tin with baking paper hanging over the sides.
Place the base ingredients into bowl and "Blend" 6 secs Speed 8, until mixture is a sticky crumb.
Press the mixture firmly into your prepared tin and set aside. - Place the cashew butter, honey, maple syrup and coconut oil into the bowl and and "Blend" 8 secs Speed 6.
Stir through the passionfruit pulp with the spatula.
Spread the filling evenly over the base and place into the freezer for one hour to set.
Store in the fridge or freezer.

Tip
Almond meal, almond butter and cashew butter can be made in the Thermomix.
Almond butter can be used for both the base and the filling instead of cashew butter.
Sunflower seeds can be used instead of nut butters for a nutfree alternative.
