Ingredients
Starter Mix
- 150 grams plain flour, or spelt flour
- 225 grams sugar
- 2 teaspoons dried yeast
- 240 grams Milk
- 60 grams water
Herman The German Friendship Cake
- 1/4 of the starter mix (after day 10)
- 150 grams sugar
- 300 grams plain flour, or spelt flour
- 1/2 teaspoon salt
- 150 grams vegetable oil, or oil of your choice, or melted butter.
- 2 eggs
- 2 teaspoons vanilla extract
- 2 green cooking apples
- 200 grams currants, or sultantas or raisins
- 2 heaped teaspoons cinamon
- 2 heaped teaspoons baking powder
- 40 grams brown sugar
- 50g Butter

Place yeast water & milk into TM bowl & mix for 2 - 5 mins at 37 degrees, the time will depend on how cold your milk is to start with. Add the flour & sugar & mix on speed 5 for 5 secs, transfer to a bowl or thermoserver, covered with a clean T-Towel, rather than the lid (as long as you can be without the container for about 10 days)
The below instructions are what you give to friends when you give them a starter
I am a sourdough cake. I'm supposed to sit on your worktop for 10 days without a lid on.
You CANNOT put me in the fridge or I will die. If I stop bubbling, I am dead.
Day1
Put me in a large mixing bowl and cover loosely with a tea towel.
Day 2 & 3 Stir well
Day 4
Herman is hungry. Add 150 plain flour, 220g sugar and milk. Stir well.
Day 5,6,7 & 8 Stir well
Day 9
Add the same as day 4 and stir well. Divide into 4 equal portions and give away to friends with a copy of these instructions. Keep the fourth portion.
Day 10:
Now you are ready to make the cake. Stir well and proceed with the full recipe below.
Place butter into TM bowl & melt for 2 mins 50 degrees speed 2- it may need longer depending on how cold your butter is. Set the butter to one side. Add the quatered apple - no need to peel & core & chop for 3 secs speed 5. Add all the other ingredients except the butter brown sugar & currants. Mix for 5-10 secs on speed 5. add currants mix 5 secs "Counter-clockwise operation" speed 5. Put into a large greased baking tin. Sprinkle with brown sugar and melted butter. Bake for 45 minutes at 170‐180C. Test the middle with a clean knife; you may need to cover in tin foil and bake for a further 20 minutes to make sure your Herman is cooked properly in the middle.
When baked, Herman can be frozen.

YES YOU CAN FREEZE Herman, i have done it successfully, you just need to defrost slowly (not in the windowsill) .................................. I have a question at step 4 you have said that 220grams of milk and sugar, i am assuming you mean 220g sugar 220g milk?...................................... When i have made the starter previously i dont give it away (all my friends have been given it) so i reduce the addition of ingredients to 1/4cup of each . that way i dont have too much starter.

This cake was delicious! I was given the starter, so didn't have to make that part Mostly followed this cake recipe with the exception of a little less flour (I used 225g Self Raising flour), and a bit more sugar (200g). I also baked it in two separate tins as it made quite a lot. Everyone loved it... was a big hit!
What is the bread recipe for this? My mum said I could use the starter in place of yeast but that doesn't seem right to me...
