Ingredients

Honey Jumble Cake

  • 170 grams Butter
  • 300 grams sugar
  • 12 egg yolks
  • 1 tsp vanilla essence
  • 200 grams SR flour
  • 2 teaspoons baking flour
  • 1/2 tsp salt
  • 175 grams Milk

Icing

  • 120 grams Butter
  • 300 grams sugar
  • 1 tsp honey
  • 1 tsp vanilla essence

Recipe's preparation

  1. Preheat oven to 180.
  2. Grease a round cake tin.
  3. Cream butter and sugar together on speed 5 for 30 seconds
  4. Add egg yolks and vanilla and mix on speed 4 for 15 seconds
  5. Add milk and mix on speed 4 for 10 seconds.
  6. Add flour, baking powder and salt and mix on speed 4 for 30 seconds or until combined
  7. Pour batter into prepared cake tin and bake for 25 to 30 mins or until an inserted wooden skewer comes out clean.
  8. Icing
  9. Place all ingredients in the bowl and mix on Counter-clockwise operation"Counter-clockwise operation" speed 2 for 4 mins

Tip

Keep an eye on the cake while its cooking and if the top is browning too much, place a piece of baking paper over the cake while continuing to cook.

This cake is great if you have made a Pavlova or angel food cake and have lots of egg yolks to use up

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Is this recipe correct, 12 egg yolks? "Honey Jumble" cake, where is the ginger that is always in honey jumble slice or biscuits?
