Ingredients

Lemon Fruit Health Bars

  • 80 g brown rice
  • 20 g chia seeds
  • 20 g Quinoa Grain
  • 40 g almonds
  • 1 lemon, Zest and Juice
  • 2 small Apples, cored & quartered, Pink Lady or Granny Smith
  • 100 g dates, pitted
  • 40 g Dried apricots, Chopped roughly
  • 60 g Cranberries (Dried)
  • 80 g Prunes,pitted
  • 100 g rolled oats
  • 50 g coconut oil
  • 50 g pepitas seeds (pumpkin)
  • 50 g Sunflower seeds
  • 2 eggs
  • 50 g Rice malt syrup

Recipe's preparation

    Lemon Fruit Health Bars
  1. 1. Preheat oven 180*C & line  baking tray (20 X 30cm) with baking paper.

     

    2. Place rice, chia, quinoa & almonds into TM bowl, mill 40sec/ Sp9. Make sure it's fairly fine, set aside.

     

    3. Place lemon zest in TM bowl, grate 20 sec/ Sp 9, scrape sides down, repeat 2 more times.

     

    4. Add dates, apricots, cranberries & prunes, chop 3-5 sec/Sp 7. Scrape sides down.

     

    5. Add apples, chop 6 sec/Sp 5.  Scrape sides down, chop 3 sec/ Sp 5. Scrape down again.

     

    6. Add oats, coconut oil, pepitas, sunflower seeds, eggs, rice malt syrup & rice/seed mixture. Place the lid & MC on & squeeze the lemon juice  onto the lid so the juice pours in & not the pips. Combine 30sec/Counter-clockwise operation"Counter-clockwise operation" /Sp 3 or until well combined.

     

    7. Press into prepared tin. Bake 20 min or until lightly browned. Cool in the tin for 20 min then transfer onto a wire rack until completely cool, then cut. Store in an air tight container in pantry.

     

Tip

I used inspiration from the Everyday Cooking for Thermomix Families recipe, Breakfast Bars, to come up with this recipe. I wanted a less sweet bar with lemon flavour too.

Flaked almonds can be pressed on the top before baking (as in pic)

 Sesame seeds can be used instead of quinoa

    Delicious - We all loved the lemon flavour. The slice turned out really well following the recipe as is. Nice texture and held together well.

    A winner! I used a mix of dried pineapple and dried figs instead of apricot and added a little fresh ginger and extra lemon. So easy and tasty. Thank you!

    Delicious! I subbed different dried fruit and seeds/nuts with what I had and used coconut flour instead of brown rice because I didn't have any and it turned out great! Added a bit of extra lemon because I like it really lemony  Big Smile
