Ingredients

Jam donut muffins

  • 375 g self-raising flour
  • 110 g caster sugar
  • 1/2 cup Yogurt
  • 1/2 cup Milk
  • 1/2 cup vegetable oil
  • dash vanilla extract
  • 2 eggs

FILLING

  • 1/3 cup jam of choice

cinnamon sugar sprinkle

  • 60 g Butter, melted
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon

Recipe's preparation

    How to:
  1. Preheat the oven to 190°C.
    Grease/line app.15 cupcake size holes or 12 muffin holes.
    The total yield will depend on the size of the pans you use.

    Blitz flour and sugar 10secs/sp5.

    Combine yogurt, milk, oil, vanilla and eggs in a suitable jug and whisk to combine.

    Add to the flour/sugar mixture and blend as briefly as possible to just combine 10-20secs/sp3.5. Fold through remaining lumps by hand rather than over mixing.

    Sppon in enough mixture to fill pans app. 1/3 full.

    Spoon in app. 1/2 heaped tspn jam on top of each batter.

    Cover with enough batter to fill pans app 2/3 full.

    Bake for 20-25 mins, until cooked, again depending on the size of the pans.

    Leave in the pans for 5 mins.

    Place each cake on a wire rack.

    Brush the tops with melted butter and sprinkle generously with cinnamaon sugar.

  3. Melt the butter in your prefered way (I used my microwave).

    Combine the sugar and cinnamon in a bowl or jar.
    You may not need all of it for this recipe.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
