Ingredients
Cupcakes
- 80 g dates
- rind of 2 limes
- 120 g Coconut sugar
- 40 g olive oil spread, (refer to my recipe)
- 85 g coconut oil
- 3 eggs
- Juice of 1 lime
- 40 g almond meal
- 75 g Coconut Flour
- 5 g baking powder
- 5 g Guar Gum
- 120 g coconut cream
Frosting
- 80 g Cashews
- 90 g coconut oil
- juice from 1 lime
- 40 g Coconut Syrup
- 50 g coconut cream
- Desiccated Coconut, for sprinkling

I'm cooking this todayRecipe's preparation
1. Preheat oven to 180C. Line muffin tins with silicone moulds or paper cases.
2. Add dates to Thermomix bowl and blitz for 4 - 5 seconds / speed 6. Set aside and clean bowl
3. Add lime rind and blitz for 20 seconds / speed 10
4. Add coconut sugar and blitz for 10 seconds / speed 10
5. Add olive oil spread, coconut oil and eggs and blend for 1 minute / speed 4
6. Add dates, almond meal, coconut flour, baking powder, guar gum and coconut cream and mix for 30 - 40 seconds / speed 6
7. Spoon mixture evenly into prepared muffin tin and bake for 15 - 20 minutes. Allow to cool on wire rack
1. Add cashews to Thermomix bowl and blitz for 15 seconds / speed 9
2. Add coconut oil, lime juice and coconut syrup and mix for 20 seconds / speed 7. Scrape down sides
3. Insert butterfly. Add coconut cream and whip for 30 seconds / speed 3. Scrape sides and whip for a further 5 - 10 seconds / speed 3
4. Allow to cool in fridge for 10 - 15 minutes before frosting cupcakes.
5. Sprinkle with desiccated coconut and serve

Really nice recipe. I have used 50gr of sugar instead of 120 and they came out sweet enough. I didn't make the frosting to avoid more sugar. Thanks for sharing!
