- 150g Caster Sugar (or milled from raw)

add apples and dates to jug turbo 1-2 seconds,then add bicarb and cup water stir for few seconds on speed 2,if you have 2 jugs leave in jug to till warm otherwise pour into bowl and cover with glad wrap.
Put butterfly on add sugar and butter and whip for 3mins speed 4 add eggs and whip further 1min /speed 4 remove butterfly add flour and apple mix stir on interval speed for few seconds till combined pour into 23cm greased lined tin.cook 180c or 160 fanforced for 30-45 mins
skewer comes out clean then proceed to next stepthe preparation steps of your recipe
topping add everything to jug cook 10mins/80 speed soft till sugar has melted then pour evenly over cake cook for a further 30mins till skewer comes out clean

Tip
This recipe was given to me by a thermix customer elspbeth i reduced the amount sugar in cake by 60g also left skin on apples (added fibre ) to compensate for sugar on top ha ha its delicious
IT is very sweet might even go down another 50g next time

This cake was a big hit.
I made it to take in for a staff morning tea and not only was it gone in a flash but it also received many favourable comments.
After reading all the comments, I followed others’ leads and cut the apples down (I only used 250gm) and the sugar (I used 100gm).
I baked it in a 20cm square cake tin, which was a perfect size.
I was a bit worried that the topping was too liquidy when I poured it on the cake but it was fine after it had been cooked in the oven.
I will definitely be making this again. Thanks for a yummy recipe!
Fabulous success! Based on other comments I cut the apples back to 300g and the sugar to 100g. We love it!
Cooked cake an extra 40 minutes but it was still soggy. Overly sweet so ended up throwing it away. Crunchy topping is nice.
Lumberjack cake is one of my favourites so I was really happy to find a thermie recipe for it.
I made this cake tonight and I am taking what's left of it to work tomorrow so I can't keep eating it.
I did make a few adjustment. I used 300gm of apple and added an extra 40 gms of flour. I also baked it for an hour initially after reading all the comments about the cake being too wet. These adjustments resulted in a beautiful moist and very moreish cake. Thanks for sharing
The first time I made this, I didn't have enough Apple, so used only half the amount. The cake turned out perfect! The second time I made it, I used the full amount of apple and although I baked it for double the time, it was still way too moist. Will use half the apple next time!
Very Yummy, agree perhaps a tad too sweet...but yummy - and is it meant to be that soggy or was mine not cooked properly? I cooked it longer than the reccommended time - but still soggy - not sure if it was meant to be like that - yummy anyway

This is a family favourite around christmas time, so glad someone has transferred it to a thermo recipe - thankyou! As mentioned above there is an error with the wording in step 2 and you seemed to have left out the adding of the vanilla in the steps?
Mine is in the oven cooking - can't wait to taste it - I went the whole hog on the sugar

Great recipe. Super easy indeed, but would be great if you could make the instructions a little clearer and place the ingredients in order of steps eg, water, vanilla essence. Just a suggestion, thanks for the share though, super yummy!
